Ingredients
- 1 1/2 Cups whole wheat flour
- 3/4 cup flour
- 1 cup sugar
- 3/4 tsp cinnamon
- couple pinches of salt
- 3 cups quick cooking oats
- 3 cups shredded coconut
- 1 1/2 cups pecans
- 3/4 cup raisins
- 3/4 dried cranberries
- 3/4 cup pumpkin seeds
- 1 1/2 cup butter
- 8 Tbsp honey
- 3/4 tsp baking soda
- 9 Tbsp boiling water

Step 1
Heat oven to 350 and line baking sheets with parchment paper
In a large bowl, whisk together the flours, sugar, cinnamon, salt, oats and coconut and toss to combine.
Fold in the nuts, raisins, cranberries and pumpkin seeds
In a small sauce pan melt the butter and honey. Ina small bowl combine the baking soda and boiling water
Make a well in the centre of the oat mixture and pour in the butter mixture. Mix to combine
Form into small ball and press down lightly. About 1/2 inch thick
Bake 16-17 min until golden
Let cool
