Ingredients
- PUDDING:
- 1/3 cup sugar
- 1/4 cup all purpose flour
- pinch of salt
- 1 cup heavy whipping cream
- 1 cup milk
- 3 large egg yolks, slightly beaten
- 2 tablespoons butter
- 2 teaspoons vanilla
- WHIPPED CREAM:
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 35 Nilla Wafers
- 3 bananas, sliced
- 7 (9 oz) clear plastic cups

Step 1
PUDDING: In a large saucepan mix together the sugar and flour. Gradually stir in the cream and milk. Cook over medium heat until it starts to thicken and boil, stirring constantly. Boil and stir for about 1 minute. Gradually stir at least ½ of the hot liquid into the beaten egg yolks. Pour and stir back into the saucepan and boil and stir for 1 minute then remove from heat. Stir in the butter and vanilla. Cover and refrigerate for 1 hour.
WHIPPED CREAM: In a large bowl or the bowl of a stand mixer beat the whipping cream and powdered sugar until stiff peaks form. Store in the refrigerator until ready to use or make just before assembly.
ASSEMBLY: Put a small amount of pudding in each cup. Put a layer of Nillas, bananas, whipped cream then pudding then top with a second layer of Nillas, bananas and whipped cream. Decorate top as desired. Store in the refrigerator for up to 8 hours.
Notes
Prep and Cook times don't include chill time.
* I recommend refrigerating these a few hours before eating to let the cookies soften a bit.
