Ingredients
- 2 sea bass fillets
- olive oil
- juice of 1 lemon
- salt and pepper
- 6 baby zucchini, halved
- fro the black olive salsa
- 1 cup of pitted black olives
- 1 cup of cherry tomatoes halved
- a handful of chopped fresh basil and dill
- juice of 1 lemon
- 1/2 a red chile, deseeded and chopped
- 1/4 cup of olive oil
- 1 lemon, sliced, rind and pith removed to garnish

Step 1
Pre-heat the oven to 375 F. Marinate the bass in a mixture of olive oil, lemon juice and salt and pepper for about 20 minutes.
In a mixing bowl, mix the olives tomatoes, chopped basil and dill, lemon juice,m red chile and olive oil. Set aside.
Slice the zucchini lengthwise, season and splash with olive oil, then bake in the oven for 20 minutes.
Pan-fry the bass in some hot olive oil, cooking it for 2 minutes on each side. Add the bass to the plates and top with the black olive salsa, serving the baby zucchini on the side, sprinkled with extra dill and lemon slices.
