This was a great accompaniement to steak. I'm going to try the leftovers in a panini with some cheese.

Ingredients
- 4 servings
- 2 large portobello mushrooms, sliced 1/2" thick
- 1/2 medium sweet red pepper, julienned
- 1/2 medium sweet yellow pepper, julienned
- 1/2 small onion, halved and sliced
- 1 medium jalapeno, seeded and finely chopped
- 2 cloves garlic, sliced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup shredded Gouda cheese
- chopped fresh rosemary or thyme
- Minced fresh parsley, optional

Preparation
Step 1
* Heat a large nonstick skillet over medium-high heat, add the mushrooms, peppers, garlic, herbs and onion until tender, turning once or twice, allowing to char and colour on each side. Reduce heat to medium-low; sprinkle with salt and pepper and keep warm until ready to serve. Sprinkle with parsley if desired.
