Ingredients
- 1/2 head (one pound) of green cabbage, shredded (6 cups)
- 1 carrot, shredded
- 1 teaspoon table salt
- 1/2 sweet onion, very thinly sliced
- 2 cups radicchio, shredded
- 1/2 cup sugar snap peas, sliced lengthwise
- 1/2 yellow bell pepper, in thin slices
- 3 radishes, thinly sliced
- 3/4 cup mayonnaise
- 3 tablespoons rice wine vinegar (or apple cider vinegar)
- 2 tablespoons sugar
- 1/4 cup chopped parsley

Step 1
Put the cabbage and carrots in a colander set over a bowl. Toss with 1 teaspoon salt and let sit for 1-4 hours. Rinse with cold water and press gently on the cabbage to squeeze out the moisture. Pat dry with a dish towel or paper towels. Mix with the rest of the ingredients, add salt and pepper to taste
