MY favorite pasta sauce, and Papa Billy's too! He likes it over spaghetti, and I like it over penne:) Once you've had this one, all other red sauces seem flavorless! ... Supposedly called PUTTANESCA (named for Italian "ladies of the night") because it was fast to make, and they could make it while waiting for their next "client"

Ingredients

  • 5 Tb. extra-virgin (Ha!) olive oil
  • 1/2-1 tsp. red pepper flakes
  • 1 chopped onion
  • 1-6 crushed garlic cloves
  • 3-6 chopped flat anchovy filets (you won't taste them)
  • 3 14-oz. cans Italian plum tomatoes, smashed (or use crushed tomatoes)
  • 1-2 c. sliced kalamata olives
  • 1-2 Tb. capers
  • cooked pasta (1 package)
  • Think those "ladies" used alot of mouthwash after eating this?

Preparation

Step 1

Heat oil in large skillet and add onion, garlic, pepper flakes and anchovies. Cook, stirring constantly, over medium heat for about 2-3 min. (until anchovies are disintegrated). Raise heat to high and add tomatoes. Cook, stirring occasionally, until thickened (about 15-20 min). Add olives and capers. Season with salt & pepper, if desired (probably enough salt in there though). Add cooked pasta to sauce, tossing well to coat evenly
