Caramelized Fried Corn and Freeze-Dried Corn

Ingredients
- For the caramelized fried corn:
- 7 oz fried corn grains
- 1/3 cup sugar
- 1/8 cup water
- To finish:
- 2 oz freeze-dried corn
- 10 61/2 x 11/4" cellophane bags

Preparation
Step 1
For the caramelized fried corn:
1. Place the water and sugar in a pan and heat to 240ºF (thread point).
2. Add the fried corn, remove from the heat and stir gently with a spatula until the sugar crystallizes and sticks and coats the seeds
3. Put the coated corn into the widest pan you have and heat the corn over a medium heat until it begins to caramelize and turns dark golden brown. Make sure that the grains do not stick together.
4. Spread the caramelized corn over a sheet of greaseproof paper so that it cools, making sure that you separate any grain that have stuck together.
5. Season the hot corn with salt.
6. Keep in a dry place.
Final Steps & Preparation:
1. Fill half a bag with the caramelized corn.
2. Fill the rest of the bag with the freeze-dried corn.
3. Close the bag and serve.
