Ingredients

  • 1 package frozen puff pastry, thawed
  • 4 large eggs, divided use
  • 1 cup plus 2 tablespoon half and half cream, divided
  • 1 tablespoon thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground nutmeg
  • 1-1/2 shredded Gruyere cheese
  • 1-1/2 cups chopped spinach
  • 1 medium sweet red pepper, chopped

Preparation

Step 1

Preheat oven to 400. Roll pastry sheets, cut out 9 squares. Place in ungreased muffin pan, pressing gently into bottoms and up sides.

In a small bowl, whisk 3 eggs. 1 cup cream, thyme, and seasonings. In another bowl, combine cheese, spinach, red pepper. Divide among pastry cups. Pour egg mixture over cheese mixture.

In a small bowl, whisk remaining egg with cream, brush over pastry edges. Bake 15-18 minutes until golden brown.
