Ingredients
- For the basic syrup:
- 3/4 cup sugar
- 11/2 cup water
- For the frozen lemon juice:
- 11/4 cup lemon juice
- 11/2 cup basic syrup (see previous step)
- 11/2 cup gin
- For the hot lemon foam:
- 11/2 cup egg whites
- 1/2 cup lemon juice
- 1/3 cup gin
- 10 tbsp basic syrup (see previous step)
- 1 1-pint ISI foaming canister
- 1 N|2O cartridge

Preparation
Step 1
For the basic syrup:
1. Mix both ingredients together and bring to the boil
2. Remove from the heat, leave to cool and keep in the fridge.
For the frozen lemon juice:
1. Mix the cold ingredients together and freeze.
2. Once the mixture is frozen, blend in a food processor until it emulsifies.
3. Keep in the freezer.
For the hot lemon foam:
1. Break up the egg whites with a whisk.
2. Add the rest of the ingredients.
3. Strain and fill the canister using a funnel.
4. Foam and keep in a bain marie at 175ºF. Stir occasionally.
Final Steps & Preparation:
1. Fill ¾ of a cocktail cup with the frozen lemon juice.
2. Top the glass with the hot foam.
