Ingredients
- For the caramelized sunflower seeds:
- 4 tbsp sugar
- 1/3 cup water
- 4 oz sunflower seeds, peeled
- salt
- To finish:
- 7 oz 70% cooking chocolate, melted
- 1 sheet wax paper

Preparation
Step 1
For the caramelized sunflower seeds:
1. Heat the water and sugar until it reaches a temperature of 240ºF.
2. Remove from the heat, add the sunflower seeds and coat them in the syrup.
3. Remove any surplus sugar and finishing caramelizing the sunflower seeds, making sure they do not stick together.
4. Spread over a tray and season with salt.
Final Steps & Preparation:
1. Put the melted cooking chocolate in a bowl and add the coated sunflower seeds with the help of a slotted spoon, cover in chocolate and then spread over waxed paper.
2. Leave the chocolate to crystallize.
