Ingredients
- For the sesame croquant:
- 4 oz fried sesame
- 4 tbsp sugar
- salt
- To finish:
- 83/4 oz 70% cooking chocolate, melted
- 1 transparent sheet

Preparation
Step 1
For the sesame croquant:
1. Place the sesame and sugar in a pan.
2. Stirring continuously, heat until the sugar has dissolved and the sesame is golden brown in color.
3. Add the salt and remove.
4. Spread between two Silpat liners and smooth out using a rolling pan until the croquant is ¼" thick. While still hot, cut into 2/3" squares and leave to cool.
Final Steps & Preparation:
1. Melt the chocolate and coat the croquant as if it were a bonbon and then leave it to crystallize on a transparent sheet.
