These are the best Spritz cookies to make! They don't spread alot on the sheet and the dough is easy to work with. I've always made these every Christmas. A favorite of Heather's ... not good for shipping, though

Ingredients

  • 2-1/2 c. flour
  • 1/4 t. salt
  • 1 c. soft unsalted butter (2 sticks)
  • 1-1/4 c. powdered sugar
  • 2 egg yolks (use the whites for Air Cookies)
  • 1/2 t. almond extract (you can use peppermint extract, if you want to do red & white poinsettias)
  • 1 tsp. vanilla
  • sprinkles/colored sugar
  • red and/or green food coloring

Preparation

Step 1

Beat butter and sugar in large bowl until light and fluffy. Beat in egg yolks and extracts. Add flour & salt and beat until blended. If you're doing red AND green cookies, divide dough and beat whatever food coloring into the batches. Fill cookie press with dough. Press cookies onto UNgreased cookie sheets (about 1" apart). If you want to use sprinkles (green trees), brush them with slightly beaten egg white, then sprinkle. Decorate green wreaths / red poinsettias with red cinnamon candies or pieces of candied cherries.... Bake in preheated 350 oven about 8-10 min (until they just begin to almost turn golden at edges). Cool
