Ingredients

    lb cooked macaroni elbows still warm

  • 4

    egg yolks whisked in a large bowl

  • 2

    cups grated asiago

  • 1

    cup grated fontina

  • 1

    +1/2 cups grated cheddar

  • 1

    +1/2 cups grated sharp cheddar

  • 1/2

    cup grated parmesan

  • olive oil

  • 1

    tsp. cayenne pepper

  • 2

    tsp/ flour

  • 6-7

    cups cream--hot

  • cubed pancetta

  • 3

    cloves minced garlic

  • salt and pepper

Directions

saute pancetta in olive oil unitl golden and crispy. remove pancetta from pan and whisk in flour+garlic to make a roux. whisk in hot cream until incorporated. whisk some of the cream mixture into the egg yolks to temper them, then whisk the rest together. add cheeses and whisk until creamy. add macaroni and toss until all macaroni is coated. add pancetta, and spices. pour into 9x13 inch baking dish, bake 20 minutes. sprinkle with more parmesan and bake until golden
