Ingredients

  • 1 pkg active dry yeast
  • 1/4 cup warm water
  • 3/4 cup boiling water
  • 1 Tbs sugar
  • 2 Tbs butter
  • 1 1/2 tsp salt
  • 3 1/4-3 1/2 cups sifted all-purpose flour
  • 2 slightly beaten egg whites

Preparation

Step 1

Soften yeast in warm water. Combine boiling water, sugar, butter, and salt; stir until butter melts. Cool to lukewarm. Add 1 cup of flour and beat well. Stir in egg whites and yeast mixture. Add enough remaining flour to make a soft dough. Turn onto floured board. Knead til smooth and elastic about 10 minutes. Place in lightly greased bowl. Turn dough to grease surface. Cover and let rise til double about an hour. Punch down. Cover let rest 10 minutes. Shape into 18 small round rolls. (Makes 12 for hamburgers). Place 2-inches apart on greased baking sheet. Cover and let rise until double about 45 minutes. Place large shallow pan on bottom of lower oven rack. Fill with boiling water. Bake rolls on rack above water in very hot oven 450 10-12 minutes.

You can also beat egg yolks with a little water. Coat to of buns and press in sesame or caraway seeds.
