Ingredients
- For the pea soup:
- 14 oz frozen peas
- 2 cups water
- 3/4 oz fresh mint
- Salt
- To finish:
- Cocktail-Master

Preparation
Step 1
For the pea soup:
1. Blend half the frozen peas with half the boiling water in a food processor until you get a smooth soup. Sieve twice and season with salt. Keep on one side out of the fridge.
2. Pick off the mint leaves, place 2/3 oz on one side and dice the other 2/3 oz as small as possible. Keep on one side.
3. Blend the rest of the peas with the boiling water and the other mint leaves until you get a smooth soup. Sieve twice. Season with salt and mix with the diced mint.
4. Place in the freezer. It should be very cold, but not frozen.
Final Steps & Preparation:
1. Put 3 tbsp of the very cold pea soup with mint in a glass.
2. Place the Cocktail-Master over the glass.
3. Heat the soup without the mint to 195ºF. Do not let it boil, as it will separate. Place 3 tbsp in the Cocktail-Master.
