Rice with Chorizo, Beans & Cilantro

Ingredients
- 2 tbsp olive oil
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 small green bell pepper, chopped
- 1 small red onion, diced
- 2 cups vegetable stock
- 1/2 cup mild salsa
- 1 tsp chili powder
- 1/2 tsp each salt, dried basil
- 2 small, smoked, cooked chorizo sausages (about 1/2 lbs/225 g) sliced
- 1 cup long-grain white rice
- 1/2 cup white kidney beans (canned or cooked)
- 1/4 cup chopped cilantro

Preparation
Step 1
1. Heat oil in large pan on medium. Add garlic, celery, green pepper and onion. Cook, stirring 2 to 3 minutes until softened.
2. Add stock, salsa, chili powder, salt & basil. Bring to boil on medium-high. Stir in sausages and rice, and return to simmer. Reduce heat to medium-low, cover and simmer until rice is tender but still firm, 15 to 20 minutes.
3. Gently stir in beans and 3 tablespoons cilantro. Garnish with remaining cilantro.
