- 4 oz Reggiano parmesan, grated
- 21/2 tbsp egg whites

Preparation
Step 1
1. Mix the egg white and the grated parmesan in a bowl and knead until you get a smooth dough.
2. Put the parmesan dough between two Silpat liners and roll it out into a 1/10" thick rectangle that is large enough to cut into 5¾" strips.
3. Bake at 345ºF for 5 minutes.
4. Remove one of the Silpat liners and replace with a sheet of baking paper. Turn the biscuit over and remove the other liner.
5. Bake the dough at 325ºF for a further 4 minutes and then cut into thins strips measuring 5¾" long and ½" wide.
6. Continue baking until they are golden brown.
Final Steps & Preparation:
1. Separate the sticks and arrange them vertically in a tall, narrow glass.
