Caramelized Sesame Croquant

Ingredients
- For the fried sesame:
- 4 oz toasted sesame
- 1/2 cup 0.4º olive oil
- For the caramelized sesame:
- 21/2 tbsp sugar
- 4 oz fried sesame (see previous step)
- 1 tbsp water
- salt

Preparation
Step 1
For the fried sesame:
1. Cover the sesame with cold oil and fry over a gentle heat until it is lightly browned. Drain and spread over a sheet of kitchen paper.
For the caramelized sesame:
1. Put the water and sugar into a pan and heat to 240ºF (thread point).
2. Add the sesame and remove from the heat. Stir slowly with a spatula until the sugar crystallizes and coats the dry sesame.
3. Put the sesame in the widest pan you have and begin to caramelize them over a medium heat until they are golden brown.
4. Place the sesame between 2 silplats and roll out until it is ¼" thick.
5. Then transfer the mixture to a piece of greaseproof paper and heat lightly in the oven.
6. Cut the mixture into 2/3" x 1/5" rectangles before it cools completely.
Final Steps & Preparation:
1. Serve in a large bowl.
