Ingredients

  • For the melon slices:
  • 1/4 4.4 lb melon
  • For the syrup:
  • 1 cup water
  • 10 tbsp sugar
  • To finish:
  • Maldon sea salt
  • Melon salt

Preparation

Step 1

For the melon slices:
1. Peel the melon and remove the seeds.
2. Use a meat slicer to cut the melon lengthways into 1/10" thick slices (max)
3. Arrange the slices over a baking tray and leave to dry for 12 hours on top of the oven at room temperature.

For the syrup:
1. Bring the water and sugar to the boil over a medium heat. Stir continuously and remove from the heat
2. Leave to cool.

Final Steps & Preparation:
1. Submerge the melon slices in the syrup, then remove them and drain.
2. Arrange them on a baking tray.
3. Caramelize in the oven at 300ºF until they are lightly golden brown.
4. Sprinkle the Maldon sea salt and melon salt over the hot melon slices so that it sticks to the slices.
