Caramelized Marrow Seeds

Ingredients
- For the fried marrow seeds:
- 51/4 oz marrow seeds
- 11/4 cup 0.4º olive oil
- For the caramelized marrow seeds:
- 2 oz sugar
- 11/2 tbsp water
- salt
- 51/4 oz puffed marrow seeds (see previous step)

Preparation
Step 1
For the fried marrow seeds:
1. Cover the seeds with cold olive oil.
2. Stirring continuously, fry the seeds until they puff up and are golden brown.
3. Using a slotted spoon to remove the seeds that are floating on the surface and drain on kitchen paper.
4. Strain the oil and keep any seeds that have remained in the bottom and have not puffed up for another session.
For the caramelized marrow seeds:
1. Put the water and sugar into a pan and heat to 240ºF (thread point).
2. Add the marrow seeds and remove from the heat. Stir slowly with a spatula until the sugar crystallizes and coats the seeds.
3. Put the marrow seeds in the widest pan you have and begin to caramelize them over a medium heat, making sure that they do not stick together.
4. Spread the caramelized seeds over a piece of greaseproof paper to cool. Separate any that have stuck together.
5. Season with salt while they are still hot.
Final Steps & Preparation:
1. Serve in a large bowl.
