I wanted this for my birthday every year, when I was little. It's one of GREAT's fantastic cakes! (The icing tastes like pralines, without the nuts)

Ingredients

  • Cake:
  • 3 c. sifted flour
  • 1-1/2 Tb. baking soda
  • 3/4 t. salt
  • 3 Tb. cinnamon
  • 1-1/2 t. cloves
  • 3/4 t. nutmeg
  • 3/4 c. butter (3 sticks)
  • 2-1/4 light brown sugar
  • 3 egg yolks
  • 3/4 c. finely chopped nuts
  • 2-1/4 c. sour cream
  • 3 egg whites
  • Caramel Icing:
  • 1/2 c. butter
  • 1 c. light brown sugar
  • 1/2 c. evaporated milk
  • 3 c. powdered sugar

Step 1

Sift flour wih spices, soda & salt. Set aside. Cream butter; adding sugar gradually and beat well. Add egg yolks, one at a time, beating well after each. Add nuts. Add dry ingredients and sour cream alternately to creamed mixture. ... Beat egg whites until stiff. Fold into creamed mixture. Bake in greased 9" pans (2) at 350 about 30 min. Cool and frost.

Icing:

Melt butter in saucepan; add brown sugar. Blend; add milk. Bring to boiling point at high heat. Boil rapidly for 1 min. Remove from heat and add powdered sugar gradually. Beat until spreading consistency. You should have enough to put between the 2 layers, and cover the cake entirely. GREAT always put some pecan halves around the edges of the top for decoration.
