Ingredients
- For the caramelized pork rinds:
- 7 oz pork rinds
- 3 oz sugar
- 1/2 oz honey
- water
- salt

Step 1
For the caramelized pork rinds:
1. Put the water and sugar into a pan and heat to 240ºF (thread point).
2. Add the pork rinds and remove from the heat. Stir slowly with a spatula until the sugar crystallizes and coats the rinds.
3. Put the caramelized rinds in the widest pan you have and then heat then over a medium heat until the rinds begin to caramelize. When they begin to caramelize, push the rinds towards one side and remove this side of the pan from the heat.
4. Add the honey to the part of the pan that you are still heating and leave to caramelize.
5. When the honey turns dark brown, stir in the rinds and finish caramelizing.
6. Spread the rinds over a baking tray lined with baking paper and separate any rinds that have stuck together. Season with salt.
Final Steps & Preparation:
1. Leave to cool and serve in a dish.
