  • For the pineapple and ginger kebab:
  • 1/2 pineapple
  • 4 oz crystallized ginger
  • 4 kebab sticks
  • For the frosting:
  • 5 tbsp egg white
  • sugar

Preparation

Step 1

For the pineapple and ginger kebab:
1. Cut the pineapple into 2/3" cubes.
2. Cut pieces of crystallized ginger, which should be 2/3" in diameter, but only 1/20" thick.
3. Place a pineapple cube on the kebab stick, followed by a slice of ginger. Repeat the operation.

For the frosting:
1. Whisk the egg whites and cover the kebab stick with the meringue. Cover one side with a little sugar.
2. Place on greaseproof paper and leave for the frosting to form without using heat so the fruit is not affected.
