- For the toasted corn croustillet:
- 3/8 cup white sugar
- 1/2 cup brown sugar
- 83/4 oz fried corn
- 23/4 tbsp egg white, freshly separated

Step 1
For the toasted corn croustillet:
1. Mix all the dry ingredients together and gradually add the egg white using a spatula until everything is blended together.
2. Dip your fingers in water and arrange small piles of corn on a baking tray with a Silplat liner.
3. Remember that they will double in size in the oven.
Final Steps & Preparation:
1. Baked for 6 to 8 minutes at 325ºF until they are golden brown.
2. Serve on a tray.
