Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 Tbs butter, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1/2 cup milk

Preparation

Step 1

Preheat oven to 350. Prepare pan with vegetable pan spray.

In small bowll,combine flour, baking powder and salt. In a medium bowl beat butter and sugar with electric mixer until light and fluffy. Add egg and vanilla, mix well. Add flour alternately with milk; blend until just combined. Fill cavities with about 1 Tbs batter, or about 2/3 full.

Bake 7-8 minutes or until tops of cakes spring back when touched. Cool in pan 5 minutes, remove to cooling rack and cool completely.

Fill and decorate with your favorite icing.

Yield: Makes about 20 cupcakes
