  • 1 3/4 cups warm water
  • 1 tablespoon sugar
  • 1 packet active dry yeast
  • 6 cups of all purpose flour
  • 1/4 cup olive oil
  • 1 tablespoon salt

Step 1

Put the dough hook attachment onto your stand mixer. (or use your dough blade in your Cuisinart) Pour the water, yeast, and sugar into the stand mixer bowl. When the yeast is bubbly add 1 cup of flour, the oil and salt. Gradually add the rest of the flour and knead on medium speed until the mixture looks like a smooth ball. This usually takes me about 4 to 5 minutes with my Kitchenaid. Take the dough out of the mixing bowl and lightly coat the bowl with olive oil. Put the dough back in and let rise for at least one hour. Once your dough has risen, you are ready to rumble.

Now here's the trick to making pizza similar to the pizza parlor. It's called a pizza stone. I preheat my stone to 400 degrees and then I slide my pizza onto it. To do this, I make my pizza on parchment paper and slide the parchment and pizza right onto the stone. This causes the crust to immediately start to cook and eliminates soggy pizza. If you don't have a pizza stone, you can do the same thing with a metal pizza pan. Preheat it first and then slide your pizza onto it parchment paper and all. Bake until the crust is golden brown. You'll be amazed at the results.
