Ingredients
- 2 lbs. pork, cubed
- 2 T canola oil
- 20 oz. can pineapple chunks
- 1-1/4 c. ketchup
- 1 T brown sugar
- 1 T cider vinegar
- 1 lg. bell pepper, chopped
- 1 medium onion, chopped
- 3 medium carrots, sliced

Preparation
Step 1
Sautee pork in oil, then add veggies. Blend pineapple juice with ketchup, brown sugar and vinegar. Add to meat and veggies and simmer til all are tender and the sauce is reduced and syrupy. Add pineapple chunks last just to heat through.
