Preparation
Step 1
Boil potatoes in a pot of salted water until tender, 10–12 minutes. Drain potatoes and return to the pot. Cook potatoes over medium heat, stirring, to remove excess moisture, about 1 minute. Mash potatoes to desired consistency, then stir in yogurt, oil, scallions, and lemon zest. Season potatoes with salt.
