- 8 oz whole wheat pasta
- 1 cup grated carrots, minced
- 1 tbsp. margarine
- 1 tbsp. flour
- 1 cup milk
- 3 slices American cheese
- 3 oz grated cheddar cheese
- 1/2 tsp salt

Step 1
in a large sauce pan over high heat, boil 4 quarts of salted water. stir in rotini and return to boiling. reduce heat to medium high. cook uncovered 10 mins. stir in carrots and cook 1 min: drain.
while pasta is cooking, melt margarine in a saucepan over medium heat. whisk in flour until thickened. whisk in milk, 1/4 cup at a time, to form a smooth sauce. continue whisking until sauce begins to bubble, about 5mins. break cheese slices in half and whisk in one piece at a time until melted. add grated cheese and whisk until sauce is creamy. whisk in salt. remove from heat.
place rotini in a large serving bowl. pour cheese sauce over pasta and stir.
