Ingredients

  • 2 cups cake flour, sifted
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp ground nutmeg
  • 1 tsp salt
  • 3/4 cup buttermilk
  • 2 eggs, lightly beaten
  • 2 Tbs butter, melted

Step 1

Preheat oven to 425. Spray doughnut pan with nonstick cooking spray.

In large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs and butter. Beat until just combined. Fill each doughnut cup 2/3 full.

Bake 7-9 minutes or until the top springs back when touched. Let cool in pan for 4-5 minutes before removing. Finish doughnuts with chocolate glaze, cinnamon sugar or powdered sugar.

Doughnuts are best served fresh.

Yields: 12 doughnuts

Chocolate glaze:
1/2 cup semisweet chocolate chips
2 Tbs butter
2 Tbs corn syrup
1-2 tsp hot water
In medium bowl microwave chips, butter, and corn syrup on 50% power for 1 minutes, stirring frequently until completely melted. Stir in 1 tsp hot water, until the glaze is thick and smooth. Add another teaspoon hot water if glaze is too thick. Use immediately to glaze doughnuts.

Cinnamon sugar:
2 Tbs sugar
1 Tbs ground cinnamon
2 Tbs butter, melted
In a shallow bowl, stir together sugar and cinnamon. Dip the baked doughnuts in melted butter and roll in cinnamon-sugar mixture to coat.

Powdered sugar:
Put 2/3 cup of powder sugar in a resealable bag.
Add doughnut, close bag and shake to coat. Repeat for remaining doughnuts
