Ingredients
- 1/2 cup orzo pasta, cooked according to package directions and cooled
- 5 ounce bag fresh baby spinach, washed and spun dry
- 2 cups cherry tomatoes, halved
- 1/2 cup green onions, chopped
- 1/2 cup fresh basil, cut into ribbons
- 4 tablespoons olive oil
- 2 tablespoons Balsamic vinegar
- 1 teaspoon honey
- Salt and pepper, to taste
- 1 cup fresh mozzarella, diced (optional)
- 1/2 cup black olives, sliced (optional)

Preparation
Step 1
1. Cook pasta according to package directions. Drain pasta, rinse well with cold water, and drain well again.
2. Place cooked orzo, baby spinach, cherry tomatoes, green onions, basil, fresh mozzarella, and olives, if using.
3. In a small bowl whisk olive oil, vinegar, honey, sea salt, and pepper. Pour over the pasta and other ingredients. Toss gently until combined. Serve immediately.
NOTE: To make ahead, combine salad ingredients and add dressing right before serving. Can be served at room temperature or chilled.
