Ingredients

  • 1 package (16 oz) frozen unsweetened whole strawberries, thawed and drained, or 3 1/2 cups fresh whole strawberries
  • 13/4 cups sugar
  • 11/4 cups vegetable oil
  • 4 eggs (or equivalent egg substitute)
  • 3 cups all purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 – 4 bananas

Step 1

Heat oven to 350°F. Grease bottoms of 2 loaf pans, 8 1/2 x 4 ½ x 2 ½ inches. Slightly mash strawberries in large bowl with fork. Stir in sugar, oil and eggs until well blended. Mix dry ingredients together, then add to wet ingredients until just moistened. Stir in bananas and walnuts. Pour into pans. Bake 50 – 55 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; loosen sides and remove from pans to wire rack. Cool completely before slicing.
[High altitude (3500-6500 ft.): Decrease oil to 1 cup. Bake 65 – 70 minutes.]
