  • 2 c sweet rice flour
  • 2 c cold water
  • 1/2 - 1 c granulated sugar
  • 1/8 tsp salt
  • food color of choice
  • potato or corn starch

Step 1

Pour 2 c sweet rice flour into large microwavable bowl, add salt and sugar, stir.

Add 2 c water and food coloring. Stir until lumps are gone and color is distributed.

Cover the bowl with plastic wrap and put in the microwave for 10 - 12 minutes. Do not stop to stir it.

Use 2 spoons to transfer dollops onto a plate with a generous amount of potato or corn starch. Roll to coat. Use hands to smooth out into round disk-shaped "cookies". The mochi will be HOT so dust hands with starch well and use caution.

Allow to cool at room temp. Store at room temp covered so they won't dry out.
