Ingredients
- 2 c All Bran Buds cereal or All Bran Original cereal, crushed
- 1 3/4 cups all purpose flour
- 1 T baking powder
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 egg, beaten
- 1/3 c vegetable oil
- 2/3 c brown sugar
- 1/2 c buttermilk (I used powdered and added water)
- 1 1/2 cups grated carrot
- Filling
- 1/2 c cream cheese, softened
- 1 T granulated sugar
- 1 T vanilla
- Topping
- 2 T butter, softened
- 2 T brown sugar
- 2 T flour
- 1/2 tsp cinnamon
- 1/2 cup nuts (I used mixed ones from Costco).

Preparation
Step 1
1. In a large bowl, combine cereal, flour, baking powder, cinnamon, nutmeg and salt.
2. In a separate bowl, beat egg and oil until light and foamy. Whisk in brown sugar and buttermilk; combine well. Stir flour mixture into egg mixture until just combined. Fold in carrots.
3. Filling: In a separate bowl, combine cream cheese, sugar and vanilla.
4. Topping: In a small bowl, use fork to combine butter, brown sugar, flour, cinnamon and nuts.
5. Divide half of the muffin mix into 12 greased or lined muffin cups. Divide cream cheese mixture over each. Top with remaining batter and sprinkle topping evenly over each.
6. Bake at 350 degrees until toothpick comes out clean, about 25 – 30 minutes.
