- 2 Tbsp. fresh lime juice
- 1 chipotle in adobo sauce, chopped
- 2 tsp. adobo sauce
- 2 tsp. tomato paste
- 1/2 tsp. chili powder
- 1/4 tsp. ground coriander
- 2 cups shredded rotisserie chicken
- 1/2 cup canned black beans, drained and rinsed
- Salt and black pepper to taste
- DIVIDE:
- 4 flour tortillas (8-inch)
- 1 cup seeded and diced tomato
- 1 cup fresh baby spinach
- 1 cup shredded Cheddar
- 1/2 cup packed fresh cilantro leaves.

Preparation
Step 1
Combine mayonnaise, lime juice, chipotle, adobo sauce, tomato paste, chili powder, and coriander. Toss in chicken and black beans; season with salt and pepper. Divide chicken mixture, tomato, spinach, Cheddar, and cilantro among tortillas, wrapping tightly, but not folding in sides. Heat a large nonstick skillet over medium-high, coat with nonstick spray, and place two wraps in the skillet, seam side down. Place a heavy skillet on top of wraps and cook until golden brown on bottoms, 2–3 minutes per side; repeat with remaining wraps.
