Double Chocolate Peppermint Chip Cookies

Ingredients
- 1/2 cup butter, unsalted, softened
- 3/4 cup light brown sugar packed
- 1 large eggs
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 3 tbsp. unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 cup baking chips, chocolate, semi sweet
- 8 pieces peppermint candy, coarsely chopped

Step 1
preheat the oven to 350. line two baking sheets with parchment paper. in a large bowl of an electic mixer, beat butter and brown sugar on medium speed until blended, 1 min. using a rubber spatula, scrape down sides and bottom of bowl and beaters as needed. add egg and vanilla, and mix until blended, about 30 secs.
Sift together flour, cocoa, baking soda and salt and add to mixer bowl. mix on low speed just to incorporate, about 30secs.
using a large spoon, stir in chocolate chips and crushed peppermint candy, distributing evenly.
drop rounded tablespoons of dough onto baking sheets, leaving about 3 inches between cookies.
bake for about 12 to 15mins until cookie edges are light brown. let sit 5 mins on baking sheets. remove cookies to wire rack to cool.
store in a tightly sealed container at room temp for up to two days.
