Elderflower and Quark Pie

Ingredients
- For the pâte brisée:
- 250 g plain flour
- 175 g butter
- 1 tbsp sugar
- 1 egg
- 1/2 tsp ground cinnamon
- 1/2 tbsp cold water*
- For the filling:
- 500 g quark
- 4 tbsp sugar
- 1 tsp vanilla essence
- 3 eggs
- 6 big elderflowers

Preparation
Step 1
Preheat the oven to 200 °C.
Cut the very cold butter in little cubes and place in a food processor all the ingredients of the pâte brisée.
*I usually use my home made butter that contains more moisture so I don't have to pour water in it. For the original pâte brisée recipe use some water.
Push the pulse button while make crumbles.
Pour the dough onto a cold surface and work together with your hands.
Take a 22 cm ∅ baking form and roll the dough on a lightly floured surface its shape. Push down with your fingers a bit on the sides either.
For the filling stir in the quark the sugar, vanilla essence and eggyolks until smooth and creamy. Carefully pinch off the little flowers and stir in the quark. Beat the egg whites with an electric mixer quite hard and combine with the quark. Pour the filling in the pie and bake in the oven for 50 minutes.
