Ingredients
- 1 cup packed dates, pitted
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter or peanut butter
- 1 cup roasted unsalted almonds, loosely chopped
- 1 1/2 cups rolled oats
- optional additions: chocolate chips, dried fruit nuts or banana chips, vanilla

Preparation
Step 1
1. Process dates in a food processor until small bits remain
2. Place oats, almonds and dates in a large mixing bowl
3. Warm honey and almond butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates
4. Once thoroughly mixed, transfer to an 8x8 inch baking dish or small pan lined with plastic wrap
5. Press down firmly until uniformly flattened
6. Cover with parchment or plastic wrap and let firm up in fridge or freezer
7. Remove bars from the pan and chop into 10 even bars.
Store in an airtight container for a few days
Freeze them to last longer
