  • 1 c Mayo
  • 1 stalk finely chopped celery
  • 2 T finely chopped red onion
  • 1/2 juiced lemon
  • 2 t curry powder (optional)
  • 3 lb skin removed roasted chicken, shredded large
  • 2 c halved seedless red grapes
  • 1/2 c chopped roasted & salted almonds (optional)
  • Kosher salt to taste
  • Fresh ground black pepper to taste
  • Whole wheat bread (optional for sandwiches)
  • Lettuce & sliced tomato (optional for sandwiches)

Step 1

In lg bowl, combine mayo, lemon juice, curry, salt & pepper. Gently fold In chicken, grapes, celery, onion & almonds.

Taste for seasoning & adjust accordingly.
