Mac & Cheese with Ham & Pickles

Ingredients
- 1 pound elbow pasta
- Salt and ground black pepper
- 3 tbs butter
- 3 tbs flour
- 1 cup chicken stock or vegetable stock
- 2 cups milk
- 1/4 cup hot sauce
- 1/4 cup yellow mustard
- 3 cups shredded swiss (or cheese of your choice)
- 1 cup Claussens pickles, chopped
- 1/2 lb thinly sliced ham, chopped

Step 1
Cook and drain pasta. While pasta is cooking heat skillet over med-high heat and add butter. When butter melts add flour and cook 1 minute. Whisk in milk, stock, mustard, hot sauce and bring to a bubble. Stir in cheese until melted(reserve some to sprinkle on top). Add pickles and ham and salt/pepper to taste. Add pasta to cheese mixture and mix well. Transfer to casserole dish and top with remaining cheese. Put under broiler for 2-3 minutes.
