Ingredients
- 1 slice smoked ham, cut 1 inch thick
- 3/4 cup rice, uncooked
- 1 green pepper, cut in thin 2 in. strips
- 1 cup diced celery
- 2 tbsp. chopped onion
- 6 -oz. can tomato paste
- 1 1/2 cups water
- 2 tbsp. wine vinegar
- 1 tbsp. sugar
- 2 tsp. worcestershire sauce
- 1/2 tsp. salt
- 1/2 tsp. basil
- 1/4 tsp. oregano
- 1/8 tsp. cayenne pepper

Step 1
Place ham slice in center of a 13x9 inch roasting pan or baking dish. Combine rice, green pepper strips, celery and onion and arrange around meat in pan. Mix tomato paste, water, wine vinegar, sugar, worcestershire sauce, salt, basil, oregano, cayenne pepper. Pour combined liquids over rice and vegetables. Cover pan or dish tightly with foil and bake in 350 degree, moderate oven for 1 hour. Remove foil cover and continue baking 5 minutes or until rice is tender and any excess moisture evaporated.
Yield: 4-6 servings
