Ingredients
- 2 tbsp margarine
- 1/3 cup packed brown sugar
- 5 or 6 pineapple slices, drained & halved
- 4 maraschino cherries
- 1 1/3 cups all purpose flour
- 2/3 cup sugar
- 2 tsp baking powder
- 2/3 cup milk
- 1/4 cup margarine
- 1 egg
- 1 tsp vanilla

Preparation
Step 1
Melt 2 tbsp margarine in a 9x13" pan ( I use a round corning ware dish). Stir in borwn sugar and 1 tbsp water. Arrange pineapple and cherries in the pan. Set pan aside.
In a medium mixing bowl stir together flour, sugar, and baking powder. Add milk, 1/4 cup margarine or butter, egg and vanilla. Beat with an electric mixer on low to medium speed about 30 seconds or till combined. Then beat on medium to high speed for 1 minute. Pour batter into pan over pineapple slices. Bake in a 350 degree oven for 30 to 35 minutes of till the cake tests done. Loosen sides and invert the cake onto a plate. Serve warm.
I normally use 3/4 of a cake mix (prepared using directions from the box)
