Ingredients

  • Crust:
  • 1 cup butter
  • 1/2 cup brown sugar
  • 2 cups flour
  • 1 cup macadamia nuts, coarsely chopped
  • Cream Cheese Layer:
  • 1 box lemon Jello, 3 oz.
  • 1 cup boiling water
  • 1 block cream cheese, 8 oz.
  • 2/3 cup sugar
  • 1 cup heavy cream, whipped
  • Mango Gelatin Layer:
  • 2 boxes lemon Jello, (3 oz. size) or (6 oz. total)
  • 2 cups boiling water
  • 3 cups mangoes, diced

Preparation

Step 1

Crust:
Preheat oven to 375 degrees.

Cream butter and brown sugar. Stir in flour and nuts.

Press into a 9x13 baking pan (spray bottom with cooking spray if pan isn't non-stick).

Bake for 15-20 minutes, until golden brown.

Cool, then chill for 15 minutes.

Cream Cheese Layer:
Dissolve lemon jello (3 oz. box) in boiling water. Cool.

Beat cream cheese and sugar; add whipped cream.

Gently fold cream cheese mixture into cooled lemon Jello.

Pour onto chilled crust. Refrigerate for about an hour or until firm.

Mango Gelatin Layer:
Dissolve lemon Jello (2-3 oz. boxes) in 2 cups of boiling water. Cool.

Arrange mangoes on firm cream cheese layer.

Gently pour the cooled jello over mangoes.

Refrigerate until set.
