Ingredients
- 3 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, crushed
- 2 - 14 oz cans diced tomatoes
- 1/4 - 1/2 tsp dried chilli flakes
- 1 tbsp balsamic vinegar
- 1/2 cup dry red wine
- 1 large handful basil leaves, torn into small pieces (can use 1 tsp dried basil)
- salt and freshly ground black pepper
- grated parmesan, to serve (optional)
- 1 pound spaghetti

Step 1
Heat the oil in a saucepan and gently cook the onion and garlic until softened.
Stir in tomatoes, chilli flakes, balsamic vinegar, wine, basil, salt and pepper.
Simmer for 15 minutes.
Meanwhile, cook the spaghetti in large pot of boiling salted water until al dente. Drain well and transfer to a large serving bowl. Pour the hot tomato sauce over the spaghetti and toss well to coat. Taste and adjust the seasonings. Serve immediately.
