Ingredients

  • 1 Tbsp olive oil
  • 1 Medium yellow onion, minced
  • 1 lb. bulk breakfast sausage, crumbled
  • 10 large eggs
  • 3 cups milk
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1 loaf of day old brioche or country white bread, cut into 1-1/2 in. cubes (about 12 cups)
  • 2 cups of shredded sharp cheddar cheese (8 oz)

Preparation

Step 1

Heat olive oil in medium skillet over medium heat. Add the onions and saute till translucent, about 7 min. Add the sausage and brown, stirring to break up lumps, about 5 min. Using a slotted spoon, transfer to shallow bowl and cool to room temp.

In a large mixing bowl, whisk the eggs, milk, salt, pepper, and garlic powder. Stir in the bread, sausage mix, and cheese.

Butter a 13x9 in baking dish, pour in the pudding and cover with foil. Let the dish sit in the fridge for atl east 1 hr. and up to overnight.

Preheat the oven to 350

Bake the pudding still covered, for about 45 min. Remove foil and bake for 10-15 min. longer, until browned. Serve immediately.
