Ingredients
- 2 cups whole raw hazelnuts (or almonds)
- 1 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup (approx.) vegetable or nut oil (may need slightly more if using almonds)
- 1/2 tsp vanilla
- scant 1/4 tsp salt (optional)

Preheat oven to 350. Place nuts in a single layer on a shallow baking pan. Toast well (may take 15 minutes for hazelnuts). Stir nuts occasionally.
Hazelnut skin is bitter, so it needs to be discarded. Wrap the cooled hazelnuts in a clean kitchen towel or paper towel and rub until skins have come off.
Process nuts in a food processor, scraping down the sides of the bowl occasionally, until they have liquified. First you get coarse meal, then finer meal, and finally it will form a ball and seem to never get liquified. Finally, the heat and friction release the natural oils and you'll have butter.
Add in the sugar, cocoa powder, vanilla, and salt. Slowly drizzle enough oil to make a spreadable consistency. Transfer into an airtight container and store in the refrigerator for 1-2 mos. For best results, stir the spread before using if oils separate.
