Sweet and Sour Meatball Skewers
Serve a sweet and savory taste of the Orient at your next party. Flavorful mini meatballs are skewered with colorful green peppers and pineapple, then basted with a quick and simple sweet-and-sour dipping sauce.

- 1 small green pepper
- 6 green onions, divided
- 1 -inch piece of ginger
- 1/2 cup apricot preserves
- 2 tbsp red-wine vinegar
- 2 tbsp ketchup
- 1 tbsp soy sauce
- 1/2 lb ground pork
- 1/4 tsp salt
- 16 chunks fresh pineapple

Step 1
1. If using bamboo skewers, soak 16 skewers in very hot water for 10 minutes. Preheat broiler to high and line shallow baking sheet with foil.
2. Cut pepper into 16 chunks. Finely chop enough green onions to equal 1/4 cup. Peel and finely chop enough ginger to equal 1 tbsp.
3. In small bowl, place pre¬serves. Add vinegar, ketchup and soy sauce; blend well. Remove 1/3 cup to small serving bowl for use as dipping sauce.
4. In medium bowl, thoroughly combine pork, salt, chopped green onion and ginger. Shape mixture into 16 meatballs. Place each meatball on skewer, followed by 1 piece of pepper and 1 pineapple chunk. Place on prepared baking sheet.
5. Brush kabobs with half of preserves mixture. Place under broiler 4 inches from heat. Cook until first side is browned, about 4 minutes. Turn, baste with remaining preserves mixture and cook until done, 3-4 minutes. Garnish with remaining green onions and serve with dipping sauce.
