Ingredients

  • 10 medium-sized onions
  • 1/4 cup butter
  • 1 clove garlic, crushed
  • 3/4 cup dry white win
  • 6 cups beef or chicken stock
  • salt and pepper
  • 6 slices of dry crusty bread
  • 1 cup grated cheese (mozarella, swiss)

Preparation

Step 1

Slice onions. In large saucepan, heat butter. Saute onions and garlaic; cover and cook over low heat until transparent. Increase heat and cook onions until faintly browned, stirring constantly. Add wine, stock and salt and pepper to taste. Cover and simmer about 20 minutes.

Arrange bread on cookie sheet and toast in 400 degrees oven, turning once. Pour soup into individual ovenproof dishes. Set a slice of bread on top of soup and sprinkle with cheese. Place in hot oven until cheese is golden brown about 5 minutes.
