Ingredients

  • 4 large eggs
  • 1/4 tsp seasalt
  • 1/4 tsp white pepper
  • 1/4 tsp dried dill
  • 1/8 tsp hot pepper sauce
  • 2 tbsp chopped scallions
  • 1/2 cup asparagus tips
  • 1/2 cup sliced shiitake mushrooms
  • 1/2 cup grated Gruyere cheese

Step 1

Heat broiler. Whisk together eggs, salt, pepper, dill and hot pepper sauce. I a non-stick skillet coated with cooking spray, over medium-high heat, cook vegetables for 3 to 5 minutes stirring until softened. Pour egg batter over vegetables, cook for 5 minutes. Top with cheese. Broil 3-5 minutes or until eggs are puffed and set. Serve immediately.
