Ingredients
- 3 lbs pork butt, diced and cold
- 3/4 lb pork fat, diced and frozen
- 1/2 bunch parsley
- 4 cloves garlic, minced
- 1 tsp oregano
- 1/3 c white wine
- 2 tbsp extra virgin olive oil
- 3 tbsp fennel seeds
- 2 tbsp salt
- 1 tbsp black pepper
Preparation
Step 1
Mix all ingredients, progressively grind to medium. Stuff sausages in casings.
